{"id":444,"date":"2009-05-03T23:42:21","date_gmt":"2009-05-04T03:42:21","guid":{"rendered":"http:\/\/mattwork.potsdam.edu\/blog\/?p=444"},"modified":"2013-05-14T20:41:13","modified_gmt":"2013-05-15T00:41:13","slug":"dragon-omelette","status":"publish","type":"post","link":"http:\/\/www.matthewgkeller.com\/blog\/2009\/05\/03\/dragon-omelette\/","title":{"rendered":"Dragon Omelette"},"content":{"rendered":"<p>Another perfection from college, when my myriad of omelettes were frequently-requested specialties, but refined slightly&#8230; Now with sea salt. \ud83d\ude42<\/p>\n<p>2-4 large eggs per person<br \/>\n1 tsp water per egg<br \/>\n1 <span style=\"color: #ff0000;\"><em><strong>drop<\/strong><\/em><\/span> <a href=\"http:\/\/images.google.com\/images?q=dave%27s%20insanity%20sauce\">Dave&#8217;s Insanity Sauce<\/a> for every 3-4 eggs\u00c2\u00a0 (If you don&#8217;t have an even multiple of 3-4, round down)<br \/>\nseveral dashes of sea salt<br \/>\nlittle bit of butter or margarine<br \/>\ngrated extra sharp cheddar cheese<br \/>\nseveral twists of black pepper from a pepper grinder<br \/>\n1 gallon orange juice<\/p>\n<p>Crack eggs into Pyrex 2+ Cup measure or other glass bowlish-thing. Add one tsp <em>water <\/em>per egg, stir briskly with stainless steel fork (no wisk, please, thanks) until frothing and well-mixed. <em>Carefully <\/em>add\u00c2\u00a0 1 <span style=\"color: #ff0000;\"><em><strong>drop<\/strong><\/em><\/span> <a href=\"http:\/\/images.google.com\/images?q=dave%27s%20insanity%20sauce\">Dave&#8217;s Insanity Sauce<\/a> for every 3-4 eggs, and sea salt. Coat large non-stick fry-pan with just enough butter or margarine to get it going. Pour in egg mixture and make a couple passes over it with a black pepper grinder. Cook\u00c2\u00a0 covered (with a cookie-sheet, if necessary) over <strong>medium <\/strong>heat until it looks &#8220;done&#8221;. From time-to-time, pop the &#8220;tumors&#8221; that will inevitably rise up with spatula, trying to keep things as even as possible.<\/p>\n<p>When &#8220;done&#8221;, uncover, and add substantial gobs of cheese to exactly one-half of the omelette. You can, of course, add other things to the same one-half, but with Dragon Omelettes you&#8217;ll quickly learn that complexity is not your friend- cheese and large glasses of orange juice are. Fold the omelette with a spatula (or two, if necessary) such that the uncheesed half is flopped on top of the cheesed half.
